that most Americans eat, these recipes focus more on
whole grains, fresh vegetables and fruits, beans and
legumes, and other plant-based
foods to create colorful and delicious dishes that are
good for you and good for the planet.
Kay Bushnell, who created the recipes, teaches
plant-based cooking that features organic, seasonal
foods. She is the Garden Gourmet in a community access
television cooking series and writes a column with
recipes for the newsletter of the Sierra Club Loma
Prieta Chapter.
